We began our activity in 1958 in Santibáñez de la Peña, the same town where we have developed our business project and corporate philosophy for all these 66 years.

Since 1958, in the heart of the Palentine Mountains, Virgen del Brezo has been a symbol of tradition, quality, and excellence. Specializing in the creation of exquisite puff pastries, we have taken our legacy beyond national borders, delighting palates across Europe.

Puff Pastry
Raw Materials and Production
At Virgen del Brezo, we select our raw materials with the utmost care to ensure we obtain top-quality ingredients. Adhering to the highest standards in this regard guarantees that our production processes, dedication, and excellence allow us to offer exceptional products.
Traditional Recipe
Our puff pastries are made with a blend of wheat flour, vegetable margarine, water, sugar, salt, and natural flavor. To achieve the perfect texture, we prepare a dough with flour, water, and salt, which is rolled out and covered with margarine. The dough is then folded over itself several times, creating thin layers sealed by the fat. These layers trap steam during baking, causing them to separate like the pages of a book, giving puff pastry its characteristic appearance.
While there are various recipes with different proportions of ingredients, at Virgen del Brezo we remain faithful to the recipes inherited from the pastry chefs of our region, proudly preserving them for over 50 years.

Manufacturing
From the initial handling of raw materials to the final product, puff pastry undergoes processes of kneading, baking, cooling, packaging, and storage.
The resting time, environmental conditions, and temperature are crucial aspects for obtaining fluffy and crispy puff pastry. Therefore, we have well-defined areas for each production phase, which are essential to ensuring the quality and flavor that have made us a reference in the industry.
Facilities
We have facilities and machinery, prepared and adapted to the demands and needs of our industry. Our factory has four puff pastry production lines, where technology serves our production experts to obtain a natural, healthy, and high-quality product, as our predecessors taught us to make in an artisanal manner.
We have 7,000 m² dedicated to four production, baking, and packaging lines, in addition to storage and loading areas.
Geographic Reach
Our products are marketed under our brand “Virgen del Brezo” in all Spanish provinces through our local distributors. Beyond Spain, our products reach countries such as Portugal, Andorra, France, the UK, Belgium, Italy, the Netherlands, Germany, the Czech Republic, Romania, Sweden, Saudi Arabia, Australia, and the USA (Puerto Rico).
Additionally, we also enjoy the trust of consumers who buy our products under private labels, which has allowed us to be part of the lives of millions of people who enjoy our puff pastries.
